One from the archives of my former Blog ‘Clothes Quarters’ and to this day one of my favourite treats! Here’s how to make these Salted Caramel Cookies.
80g of Salted Butter (at room temperature)
40g of Light Brown Sugar
40g of Sugar
1 Large Egg
1 tsp Vanilla Extract
100g of Self-Rasing Flour
50g of Cocoa Powder
Fun size Mars Bars
Pre-heat the oven to 180 degrees. Rub the butter and both types of sugar together until fluffy. Mix in the vanilla extract and the egg. Add in the flour and cocoa powder until it is all well mixed and a thick consistency. Make balls of about a table spoon size and place on baking paper on a tray and press half a Fun Size Mars Bar into each cookie and fold the edges back up to cover the Mars bar completely. Sprinkle a little rock salt on top. Bake for 10 minutes and leave to cool.
